Meet the Funk

Whereas most brewers take great care to keep their breweries clean, this group of beers have deliberately been exposed to bacteria and/or wild yeast. This is how beers used to be made, hundreds of years ago. The challenge for brewers is to manage the brewing process such that the end result is still tasty and drinkable. Think of these beers as the difference between milk (a pale ale) and stilton cheese (a funky, bacteria infected taste sensation - but not for everybody!)

Brilliant Beer

Gueuze

A Gueuze is a traditional Belgian blend of young and old Lambics, which are then bottle after blending, then aged for 2-3 years to produce a dryer, fruitier and more intense style of Lambic. The blending of these beers is an art in itself and the challenge is to produce a consistent flavour over time, given the subjective nature personal touch of a master blender. Some American breweries are now specialising in producing this ancient style of beer. For those who love champagne, this is a good place to start. This beer is very un-beer like and can take a bit of getting used to but like most things in life, it's worth the effort.
